Ingredients and Method: One or two whole garlic bulbs peeled and chopped as small as you can. Put the chopped garlic in a bowl and just cover with olive oil. About the same weight of wee fat red and green chilies, also chopped as small as you can. Put them with the garlic and add olive oil to just cover them. About the same weight of fresh ginger, chopped as small as you can.

The juice of about half a lime poured into the garlic, chili and ginger mix and olive oil to just cover. A handful of fresh parsley chopped very small and gently stirred into the mixture. |
